If you were to tell me a year ago that at some time in the future I would be enjoying fresh fish regularly, I would have told you that you were crazy. I’m really finicky about fish and so don’t eat it that often.
Then I start dating a freediver and spearfisherman. My freezer is full of fish he caught himself off the coast of California. In fact, yesterday he went diving in the morning and brought home a fresh perch, which we ate last night.
As a cook, he was in rare form. That fresh perch was the best he’s ever made me. It was flaky and moist. There was just enough crunch to the skin with a hint of buttery taste (although he didn’t use any butter at all). I ate four small fillets, about one whole fish.
We also ate the perch pictured above, which he caught a couple weeks ago. Just as tasty!
In case you want to enjoy some fish yourself, he dusts the fillets lightly with flour and sautes them with some lemon pepper. To accompany it, I made some brown rice flavored with chicken bouillon, green onion and a hit of barbecue sauce.
What a wonderful way to round out my day. Definitely a celebration!
